How we grow them
Shiitake can be grown quickly – on sawdust substrate in a greenhouse. We do it slowly, on real grey alder and oak logs, the way it has been done in East Asia for centuries. The mushroom needs two years before a log starts to produce.
That is why the caps are denser and the flavour more concentrated – and drying makes it deeper still. We dry slowly, at a low temperature, to keep the aroma intact.
